This Turmeric Chicken Fried Rice is a flavorful and colorful dish that's easy to make. Turmeric adds a beautiful golden hue and earthy flavor to the dish while the combination of chicken, vegetables, and rice makes it a satisfying meal. Perfect for a quick weeknight dinner or meal prep!
Ingredients:
- 2 cups cooked jasmine rice, cooled and refrigerated
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 carrot, diced
- 1 cup frozen peas
- 2 teaspoons turmeric powder
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 teaspoon sesame oil
- Salt and pepper, to taste
- Chopped green onions and cilantro, for garnish
Instructions:
In a big skillet or wok, heat up one tablespoon of olive oil on high heat
After adding the chicken pieces, cook for about 5 minutes, or until the chicken is no longer pink in the middle
Take out and place aside from the skillet
Transfer the remaining 1 tablespoon of olive oil to the same skillet
When the onion begins to soften, add it and cook for another two to three minutes
Diced carrot, diced red bell pepper, and minced garlic are added
Cook until the vegetables are tender, about 3 to 4 more minutes
Add the frozen peas and cooked rice and stir
Cook, stirring constantly, for two to three minutes
To the skillet, add the sesame oil, fish sauce, soy sauce, and turmeric powder
Toss to mix in the turmeric and distribute it evenly
Once everything is thoroughly heated, add the cooked chicken back to the skillet and stir-fry for an additional two to three minutes
To taste, add salt and pepper for seasoning
Before serving, garnish with chopped cilantro and green onions
