Low Carb Mocha Brownies



These low-carb mocha brownies are a great way to enjoy the rich flavors of chocolate and coffee. Great for people on the keto diet or who want a low-glycemic treat they can eat without feeling bad.

Ingredients:

  • 1 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup erythritol or any keto-friendly sweetener
  • 2 tablespoons instant coffee granules
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sugar-free chocolate chips optional

Instructions:

Preheat oven to 350F 175C

Grease an 8x8 inch baking pan or line with parchment paper

In a mixing bowl, combine almond flour, cocoa powder, erythritol, instant coffee, baking powder, and salt

Stir in melted butter, eggs, and vanilla extract until well combined

Fold in sugar-free chocolate chips if using

Pour the batter into the prepared baking pan and spread it evenly

Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean

Allow the brownies to cool completely before cutting into squares
