Stuffed Mushrooms



These stuffed mushrooms are a savory and satisfying appetizer, perfect for parties or gatherings. They are filled with a creamy, flavorful mixture that is sure to impress even non-vegan guests!

Ingredients:

  • 12 large mushrooms, stems removed and finely chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup vegan cream cheese
  • 2 tablespoons nutritional yeast
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions:

Preheat the oven to 350F 175C

In a skillet, heat the olive oil over medium heat

Add the chopped mushroom stems, onion, and garlic

Cook until softened, about 5 minutes

Stir in the breadcrumbs, vegan cream cheese, nutritional yeast, soy sauce, thyme, salt, and pepper

Cook for another 2-3 minutes, then remove from heat

Stuff each mushroom cap with the mixture and place on a baking sheet

Bake for 20-25 minutes, or until the mushrooms are tender

Garnish with fresh parsley before serving

Mini Vegan Pecan Pies



These Mini Vegan Pecan Pies are a tasty treat that you can eat in small amounts and enjoy any time. These are made with healthy ingredients and taste great with pecans. They will satisfy your sweet tooth without using any animal products. These mini pies will be a hit at any event, whether it's a holiday party or just a treat for yourself.

Ingredients:

  • 1 cup pecans, chopped
  • 1/2 cup maple syrup
  • 1/4 cup coconut sugar
  • 2 tablespoons coconut oil, melted
  • 1 tablespoon ground flaxseed
  • 3 tablespoons water
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 package vegan pie crust store-bought or homemade

Instructions:

Set the oven to 350F 175C and heat it up

To make a flax egg, put water and ground flaxseed in a small bowl

Let it sit for 5 minutes

Chop the pecans and put them in a different bowl

Add the maple syrup, coconut sugar, melted coconut oil, vanilla extract, and salt

Mix well

The flax egg should be added to the pecan mixture and mixed in well

Slice the vegan pie crust into circles that fit the mini muffin tin cups

You can use a cookie cutter or a glass to do this

The circles of pie crust should be pressed into the mini muffin tin to make small pie crust cups

Fill up almost all of the pie crust cups with the pecan filling

It should be baked in a hot oven for twenty to twenty-five minutes, or until the crust is golden brown and the filling is set

Take the mini pecan pies out of the oven and let them cool for 10 minutes in the muffin tin

Then carefully move them to a wire rack to cool all the way through

Paleo Pepperoni Cheese Ball



This paleo-friendly version of the traditional pepperoni cheese ball is ideal for potlucks and get-togethers. It's flavorful, creamy, and full of healthy ingredients.

Ingredients:

  • 1 cup raw cashews, soaked for 2 hours and drained
  • 1 cup sun-dried tomatoes, soaked for 1 hour and drained
  • 2 cloves garlic
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chopped pepperoni slices look for Paleo-friendly options
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped green onions
  • 1/2 cup almond flour

Instructions:

Soaked cashews, sun-dried tomatoes, garlic, lemon juice, oregano, basil, sea salt, and black pepper should all be combined in a food processor

Process until creamy and smooth

After transferring the mixture to a bowl, thoroughly mix in the almond flour, chopped pepperoni, parsley, and green onions

After forming the mixture into a ball, firmly wrap it in plastic wrap

To firm up, refrigerate for a minimum of one hour

Unwrap the cheese ball before serving, and if you'd like, coat it with more chopped parsley or almond flour

Serve with veggie sticks for dipping or Paleo-friendly crackers

  • 1 cup all-purpose flour
  • 1/2 cup vegan butter, softened

  • 1/2 cup vegan chocolate chips

Instructions:

Start by heating the oven to 350F 175C

Then add the vanilla extract and mix it in well

Sift the flour, baking soda, and salt together in a different bowl
