Blueberry Cinnamon Pancakes



Blueberries and cinnamon make these vegan pancakes taste great, and they're perfect for a cozy breakfast or brunch.

Ingredients:

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1 cup almond milk
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh blueberries

Instructions:

In a mixing bowl, whisk together flour, sugar, baking powder, and cinnamon

Add almond milk, vegetable oil, and vanilla extract

Stir until just combined

Gently fold in the fresh blueberries

Heat a non-stick pan or griddle over medium heat

Pour batter onto the pan to form pancakes of desired size

Cook until bubbles form on the surface, then flip and cook until golden brown on both sides

Repeat with remaining batter

Serve warm with maple syrup or desired toppings
