This paleo-friendly version of the traditional pepperoni cheese ball is ideal for potlucks and get-togethers. It's flavorful, creamy, and full of healthy ingredients.
Ingredients:
- 1 cup raw cashews, soaked for 2 hours and drained
- 1 cup sun-dried tomatoes, soaked for 1 hour and drained
- 2 cloves garlic
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/2 cup chopped pepperoni slices look for Paleo-friendly options
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped green onions
- 1/2 cup almond flour
Instructions:
Soaked cashews, sun-dried tomatoes, garlic, lemon juice, oregano, basil, sea salt, and black pepper should all be combined in a food processor
Process until creamy and smooth
After transferring the mixture to a bowl, thoroughly mix in the almond flour, chopped pepperoni, parsley, and green onions
After forming the mixture into a ball, firmly wrap it in plastic wrap
To firm up, refrigerate for a minimum of one hour
Unwrap the cheese ball before serving, and if you'd like, coat it with more chopped parsley or almond flour
Serve with veggie sticks for dipping or Paleo-friendly crackers
