Ingredients:
- 2 cups frisee lettuce
- 4 oz smoked salmon
- 2 large eggs
- 1/4 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup cucumber, thinly sliced
- 2 tablespoons capers
- 2 tablespoons fresh dill, chopped
- 2 tablespoons olive oil
- 1 tablespoon white wine vinegar
- Salt and pepper to taste
Instructions:
Prepare a large mixing bowl and add the frisee lettuce, cherry tomatoes, red onion, cucumber, capers, and fresh dill
In a small bowl, whisk together the olive oil, white wine vinegar, salt, and pepper to create the dressing
Drizzle the dressing over the salad ingredients and toss gently to coat
Divide the dressed salad among two serving plates, creating a bed of greens on each plate
To poach the eggs, bring a pot of water to a gentle simmer
Crack each egg into a small bowl
Create a gentle whirlpool in the simmering water and carefully slide one egg into the center
Poach for 3-4 minutes until the whites are set but the yolks are still runny
Repeat with the second egg
Using a slotted spoon, carefully remove the poached eggs from the water and place one on top of each salad
Lay slices of smoked salmon alongside the poached eggs on each plate
Garnish the salad with additional dill and capers if desired
